Marking the continued expansion of The Del's culinary experiences, Nobu Del Coronado will be the newest addition to the world-renowned Japanese restaurant empire founded by Nobu Matsuhisa and Robert De Niro.
Nobu Del Coronado will offer over 3,700 square feet of stunning indoor and al fresco oceanfront dining space, including an outdoor covered patio dining with a pagoda bar and dedicated sushi bar. Nobu Del Coronado will also spotlight Nobu-signature dishes including the iconic Black Miso Cod and Yellowtail Jalapeño, as well as Nobu's world-renowned sushi, plus locally inspired dishes and cocktails.
Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 750 rooms (to include cottages and villas), 65,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, food truck, marketplace, ice cream shop, and in-room dining.
The ideal candidate will be an exceptional leader with a great vision, a drive for innovation, and fosters a positive and engaging culture. At least 5 years of chef experience in a high-volume restaurant is required.

Classification: Full-Time
Shift: Various – must be available to weekdays, weekends, and holidays.
Pay Rate: The annual salary range for this role will be be $110,000 per year and is based on applicable and specialized experience and location.
What will I be doing?
Our new Nobu Executive Chef will report to the Executive Chef on property and is responsible for operating the restaurant kitchen to the highest of standards and to comply with Nobu procedures and policies. The Nobu Executive Chef also needs to ensure food quality, consistency, price, and supplier relationships.
Position Summary:
· Menu Development: Design and develop creative, seasonal, and high-quality sushi and Japanese-inspired menus. Continuously innovate dishes while maintaining the authenticity of traditional Japanese cuisine.
· Culinary Leadership: Lead, mentor, and manage the kitchen staff, ensuring a high level of performance, teamwork, and professionalism.
· Food Quality: Ensure that all food leaving the kitchen meets the highest standards of quality, presentation, and taste.
· Inventory & Ordering: Manage kitchen inventory, order supplies, and maintain stock levels to ensure smooth kitchen operations. Ensure minimal food waste through efficient ordering and prep.
· Kitchen Operations: Oversee all kitchen operations, including food preparation, cooking, and plating, while ensuring adherence to safety and cleanliness standards.
· Training & Development: Train and develop kitchen staff in sushi preparation, Japanese culinary techniques, and fine dining service protocols.
· Cost Management: Manage kitchen budgets, control food costs, and implement strategies to maximize profitability without compromising quality.
· Guest Experience: Ensure that every guest receives an exceptional dining experience by overseeing the preparation and presentation of each dish. Respond to feedback and resolve any issues promptly.
Collaboration: Work closely with the front-of-house team to ensure seamless communication between the kitchen and dining areas.
